APPLE PIE MUFFINS
Grease 18 muffin cups.
Preheat oven to 350°F
- 1⁄2 cup firmly packed brown sugar
- 1⁄3 cup all-purpose flour
- 1⁄4 cup unsalted butter, cold cut-up
- ½ teaspoon cinnamon
In a small bowl use pastry cutter to blend topping ingredients till crumbly; set aside.
- 3 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp ground cardamom
- ½ tsp ground nutmeg
- 1⁄2 tsp salt
In a small bowl whisk dry ingredient; set aside.
In a large bowl whisk wet ingredients. Slowly stir in dry ingredients until smooth. Then fold in the apples.
- 3 cups diced peeled firm tart apples(such as Granny Smith)
Spoon into greased muffin cups filling to 3/4 full and sprinkle topping evenly on top.
Bake at 350°F for 25-30 minutes or until golden brown.
